  • 1 ¼ cups cornmeal
  • 1 cup all-purpose flour
  • ¼ cup granulated sugar
  • ¼ cup honey
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¼ cup frozen corn
  • Butter for serving
  • Honey for serving

Instructions

  • Step 1: Preheat your oven to 400°F (200°C).
  • Step 2: Grease a 9-inch square baking pan with butter.
  • Step 3: In a large mixing bowl, whisk together the cornmeal, all-purpose flour, granulated sugar, baking powder, and salt.
  • Step 4: In another bowl, mix together the milk, melted butter, beaten egg, and honey until smooth.
  • Step 5: Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  • Step 6: Gently fold in the frozen corn.
  • Step 7: Pour the batter into the prepared baking dish and bake for 20-25 minutes.
