Instructions
Step 1: Prepare Your Instant Pot. Start by ensuring your Instant Pot is clean and ready to go. Plug it in and set it to the sauté function. Add the olive oil and allow it to heat up for a minute.
Step 2: Sauté the Onions. Once the oil is shimmering, add the sliced yellow onion to the pot. Sauté the onions for about 3-4 minutes until they become soft and translucent.
Step 3: Season the Chicken. While the onions are cooking, season the boneless skinless chicken breasts with salt and pepper.
Step 4: Add the Chicken and Other Ingredients. After the onions are sautéed, carefully add the seasoned chicken breasts to the pot, followed by the canned diced tomatoes, mild salsa, taco seasoning, and lime juice. Stir everything together gently.
Step 5: Pressure Cook the Chicken. Secure the lid on your Instant Pot and set the steam release valve to the sealing position. Cook on high pressure for 10 minutes. Allow the pressure to naturally release for 5 minutes, then quick-release any remaining pressure.
Step 6: Shred the Chicken. Open the Instant Pot and use two forks to shred the chicken directly in the pot. Mix the shredded chicken with the sauce.
