Ingredients

Shrimp

  • 1 pound large shrimp, peeled and deveined

Spices

  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder

Bacon

  • ½ pound bacon, cut into 2-inch slices

Tortillas

  • 4 pieces tortillas (corn or flour, your choice)

Garnishes

  • 1 cup fresh cilantro, chopped for garnish
  • 1 cup chopped onions optional
  • 1 cup lime wedges for serving
  • 1 cup avocado slices optional
  • 1 cup your choice of salsa optional but recommended

Instructions

  • Step 1: Rinse the shrimp under cold water and pat them dry with paper towels.
  • Step 2: In a large bowl, combine the ground cumin, smoked paprika, black pepper, and garlic powder. Toss the shrimp in the spice mixture until well-coated.
  • Step 3: Wrap each seasoned shrimp snugly with a slice of bacon, securing the ends if necessary.
  • Step 4: Preheat your grill to medium-high heat and prepare grill basket or skewers.
  • Step 5: Grill the bacon-wrapped shrimp for about 2-3 minutes on each side until the bacon is crispy and the shrimp turns pink.
  • Step 6: Warm your tortillas on the grill for about 10-20 seconds on each side until just heated.
  • Step 7: Assemble your tacos by placing a couple of bacon-wrapped shrimp in each tortilla and topping with chopped onions, fresh cilantro, avocado slices, and salsa.
  • Step 8: Serve immediately with lime wedges on the side.
