  • 2 teaspoons Salt Divided
  • 1 clove Garlic Minced
  • ¼ cup Green Onion Chopped
  • ¼ cup Fresh Parsley Chopped
  • ¼ cup Fresh Dill Chopped
  • 1 large Egg Beaten
  • ¾ cup Parmesan Cheese Grated
  • ¼ cup All-Purpose Flour
  • ¼ cup Olive Oil For frying

Greek Yogurt Ranch Dip

  • 1 cup Greek Yogurt
  • 1 tablespoon Ranch Seasoning Mix
  • to taste Salt and Pepper

Instructions

  • Step 1: Prepare the Zucchini - Wash the zucchini, grate it, sprinkle with 1 teaspoon of salt, and let it sit for 10 minutes to draw out moisture.
  • Step 2: Make the Fritter Mixture - Squeeze out excess moisture from the zucchini, then mix it with garlic, green onion, parsley, dill, egg, Parmesan, flour, and remaining salt in a bowl.
  • Step 3: Cook the Fritters - Heat olive oil in a skillet, drop spoonfuls of the mixture, flatten slightly, and cook for 3-4 minutes on each side until golden brown.
  • Step 4: Prepare the Greek Yogurt Ranch Dip - Mix Greek yogurt and ranch seasoning in a small bowl, adjusting seasoning with salt and pepper.
