  • 1.5 pounds lean ground turkey

  • 14.5 ounces canned diced tomatoes, undrained
  • 1 head iceberg lettuce, diced
  • 1 cup black beans, drained and rinsed
  • 1 cup Mexican cheese blend, shredded
  • 1 each avocado, pitted and diced

Seasonings

  • 2 teaspoons dried minced onion
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon seasoned salt
  • 0.5 teaspoon ground cumin
  • 0.25 teaspoon pepper

Garnishes

  • fresh cilantro, minced for garnish
  • sour cream for garnish

Instructions

  • Step 1: In a large skillet over medium heat, add the lean ground turkey. Using a wooden spoon, break it apart as it cooks. Stir occasionally until the turkey is browned and cooked through, about 7-10 minutes.
  • Step 2: Once the turkey is cooked, drain any excess fat if necessary. Add in the canned diced tomatoes (with their juices), dried minced onion, chili powder, garlic powder, seasoned salt, ground cumin, and pepper. Stir to combine and let the mixture simmer for about 5-7 minutes until everything is heated through and the flavors meld together.
  • Step 3: While the turkey is simmering, prepare the salad. In a large bowl, combine the diced iceberg lettuce and black beans. Toss them together to mix evenly.
  • Step 4: To assemble, divide the lettuce and bean mixture among serving bowls. Top each bowl with the cooked turkey mixture, shredded Mexican cheese, and the diced avocado.
  • Step 5: Finish off your salad with a sprinkle of fresh minced cilantro and a dollop of sour cream on top. Enjoy your vibrant and tasty turkey taco salad right away!
