Toasted Maple Rosemary Cashews

Ingredients

  • 2 cups raw cashews
  • 2 tsp coconut oil or avocado oil
  • 3 tbsp pure maple syrup
  • 1 tbsp coconut sugar
  • 1 tbsp fresh rosemary finely chopped
  • 1/2 tsp ground cinnamon
  • 1 pinch sea salt

Instructions

  • Place a 10-inch cast iron skillet over medium heat and add the coconut or avocado oil.
  • Add the raw cashews, maple syrup, coconut sugar, chopped rosemary, cinnamon, and sea salt to the skillet and stir to coat evenly.
  • Cook over medium heat, stirring constantly, for 8 to 10 minutes until the liquid is absorbed and the cashews are golden-brown and crispy.
  • Remove the skillet from heat and let the cashews cool slightly in the pan before transferring to a plate or bowl to finish cooling.

Notes
