Instructions
Step 1: Preheat your oven to 375°F (190°C). Clean the mushrooms with a damp paper towel and remove the stems.
Step 2: Heat olive oil in a skillet over medium heat. Sauté the chopped onion for 3-4 minutes until translucent, then add minced garlic and cook for another minute.
Step 3: In a mixing bowl, combine cream cheese, mozzarella, Asiago, sautéed onions, garlic, and parsley. Season with salt and pepper, and mix until well combined.
Step 4: Stuff each mushroom cap with the cheese mixture, packing it in nicely. Place on a baking sheet lined with parchment paper.
Step 5: In a small bowl, mix panko breadcrumbs, Parmesan, and melted butter. Sprinkle over the stuffed mushrooms. Bake for 20-25 minutes until tender and golden brown.
Step 6: Let cool for a few minutes before serving. Garnish with extra parsley if desired.
