Instructions
Step 1: Cook the elbow macaroni according to the package instructions. Salt the boiling water for added flavor. Once al dente, drain and set aside.
Step 2: In a large skillet, heat olive oil over medium heat. Add diced onion and sauté for 3-4 minutes until translucent. Stir in minced garlic and cook for another minute.
Step 3: Add ground beef to the skillet, breaking it apart. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
Step 4: Sprinkle in taco seasoning, stirring to coat the meat. Let spices toast for a minute.
Step 5: Stir in black beans and crushed tomatoes. Mix and bring to a simmer. Cook for about 5 minutes.
Step 6: In a large mixing bowl, combine cooked pasta with the meat mixture. Stir in 2 cups of shredded cheese.
Step 7: Preheat oven to 350°F (175°C). Transfer mixture to a greased baking dish. Top with remaining ½ cup cheese. Bake for about 20 minutes until cheese is melted and bubbly.
Step 8: Let cool for a few minutes. Garnish with chopped cilantro or parsley. Serve hot.
