Step 2: Activate the Yeast. In a small bowl, combine 1/4 ounce of active dry yeast with 1 tablespoon of granulated sugar and 1/2 cup of warm milk. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.
Step 3: Combine the Ingredients. In a large mixing bowl, combine the mashed sweet potato, softened butter, remaining 3 tablespoons of sugar, and salt. Add in the frothy yeast mixture and the two eggs. Whisk everything together until well combined.
Step 4: Add the Flour. Gradually add 3 cups of all-purpose flour to the wet ingredients, mixing with a wooden spoon or spatula until it forms a sticky dough. If the dough is too sticky, add the additional 1/2 cup of flour bit by bit until you can work with it.
