Ingredients

Dry Ingredients

  • 0.5 teaspoon Salt

Wet Ingredients

  • 1 cup Unsalted butter, softened
  • 0.5 cup Granulated sugar
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 0.33 cup Strawberry jam for filling
  • Powdered sugar for dusting (optional)

Instructions

  • Step 1: Prepare your ingredients by gathering them and ensuring butter is at room temperature. Preheat your oven to 350°F (175°C).
  • Step 2: In a medium bowl, whisk together the all-purpose flour and salt. Set aside.
  • Step 3: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Step 4: Add the egg and vanilla extract to the butter mixture and mix until well combined.
  • Step 5: Gradually add the flour mixture to the wet mixture, mixing on low speed until just combined.
  • Step 6: Scoop out dough and roll into balls, placing them on a lined baking sheet. Flatten each cookie slightly.
  • Step 7: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  • Step 8: Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  • Step 9: Spread a teaspoon of strawberry jam on the flat side of half the cookies and top with the remaining cookies.
  • Step 10: Dust with powdered sugar if desired.
