  • 1 box Lemon cake mix 15.25 ounces

Wet Ingredients

  • 12 ounces Strawberry soda
  • 1/2 cup Unsweetened applesauce Halal-friendly alternative to eggs
  • 1/4 cup Vegetable oil
  • 1 teaspoon Vanilla extract

Frosting and Garnish

  • 1/2 cup Whipped cream cheese frosting Store-bought or homemade
  • to taste Fresh strawberries For garnish

Instructions

  • Step 1: Preheat your oven to 350°F (175°C). Line a standard cupcake pan with paper liners.
  • Step 2: In a large mixing bowl, combine the lemon cake mix and strawberry soda. Stir until just combined, ensuring no large lumps remain.
  • Step 3: Add the applesauce, vegetable oil, and vanilla extract to the batter. Mix gently until thoroughly blended, being careful not to overmix.
  • Step 4: Scoop the batter into the prepared cupcake liners, filling each about two-thirds full.
  • Step 5: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Step 6: Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  • Step 7: Frost each cupcake with whipped cream cheese frosting and top with a fresh strawberry.
