Strawberry Jello Cake

Ingredients

Cake Ingredients

  • 15.25 ounces white cake mix (1 package)
  • 1.25 cup water
  • cup vegetable oil
  • 3 egg whites

Jello Ingredients

  • 3 ounces strawberry gelatin mix (1 box)
  • 1.5 cup water (divided)
  • 8 ounces Cool Whip (store-bought or homemade)
  • 2 cups strawberries (sliced)

Instructions

  • Step 1: Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the white cake mix, 1 ¼ cup of water, ⅓ cup of vegetable oil, and the 3 egg whites. Use an electric mixer on medium speed to blend the ingredients until the mixture is smooth and well combined, about 2 minutes.
  • Step 2: Pour the batter into a greased 9×13 inch baking pan. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool for about 15 minutes.
  • Step 3: In a medium bowl, add the 3 ounces of strawberry gelatin mix. Boil 1 ½ cups of water, then pour it over the gelatin. Stir until completely dissolved and allow to cool.
  • Step 4: Poke holes all over the top of the cooled cake using a wooden spoon handle or skewer, about 1 inch apart.
  • Step 5: Pour the cooled Jello over the cake, filling the holes. Refrigerate for at least 4 hours, or until set.
  • Step 6: Spread the Cool Whip over the top of the cake and arrange the sliced strawberries on top for presentation.

Notes

Allow the cake to cool completely before adding the Jello to avoid melting it. For a more intense strawberry flavor, add a splash of pure strawberry extract to the batter.
