Instructions
Step 1: Peel the Russet potatoes and cut them into thin fries, about 1/4 inch thick. Rinse the cut potatoes in cold water to remove excess starch, then dry thoroughly.
Step 2: Heat the oil to 325°F (160°C) in a deep-fryer or large pot. Fry the potatoes in batches for about 4–5 minutes until soft but not browned. Drain on paper towels.
Step 3: Increase the oil temperature to 375°F (190°C). Place the pre-fried potatoes on a baking sheet lined with paper towels.
Step 4: Fry the potatoes again until golden brown and crispy, about 2–3 minutes. Remove and sprinkle with salt while hot.
Step 5: Season the steaks with salt and pepper. Heat a skillet over medium-high heat, add olive oil, and cook the steaks for 3–4 minutes on each side for medium-rare.
Step 6: Let the steaks rest for at least 5 minutes to redistribute the juices.
Step 7: Slice the steaks against the grain and serve with the crispy frites. Enjoy!

For the crispiest fries, ensure to dry the cut potatoes thoroughly before frying. Don’t overcrowd the pot during frying.
