Ingredients

Potatoes

  • 3 pounds Russet potatoes (about 3 large)

Oil

  • Canola, vegetable, or peanut oil for frying

Seasoning

  • 1 teaspoon Salt
  • 2 steaks Ribeye or sirloin
  • 1 tablespoon Olive oil
  • Salt and pepper to taste

Optional Flavorings

  • Garlic cloves, rosemary, or thyme for additional flavor

Instructions

  • Step 1: Peel the Russet potatoes and cut them into thin fries, about 1/4 inch thick. Rinse the cut potatoes in cold water to remove excess starch, then dry thoroughly.
  • Step 2: Heat the oil to 325°F (160°C) in a deep-fryer or large pot. Fry the potatoes in batches for about 4–5 minutes until soft but not browned. Drain on paper towels.
  • Step 3: Increase the oil temperature to 375°F (190°C). Place the pre-fried potatoes on a baking sheet lined with paper towels.
  • Step 4: Fry the potatoes again until golden brown and crispy, about 2–3 minutes. Remove and sprinkle with salt while hot.
  • Step 5: Season the steaks with salt and pepper. Heat a skillet over medium-high heat, add olive oil, and cook the steaks for 3–4 minutes on each side for medium-rare.
  • Step 6: Let the steaks rest for at least 5 minutes to redistribute the juices.
  • Step 7: Slice the steaks against the grain and serve with the crispy frites. Enjoy!

Notes
