Instructions
Step 1: Preheat your oven to 350°F (175°C).
Step 2: Grease a muffin tin with cooking spray or olive oil.
Step 3: In a mixing bowl, crack the eggs and add salt and milk. Whisk until well combined.
Step 4: Stir in the cheddar cheese, Parmesan cheese, and spinach until evenly mixed.
Step 5: Pour the mixture into the muffin tin, filling each cup about ¾ full.
Step 6: Bake for 20-25 minutes until set and golden at the edges.
Step 7: Let cool for a few minutes, then gently remove from the muffin tin.
