  • 0.25 cup yellow onion, peeled and chopped
  • 1 cup long grain rice
  • 1 tablespoon garlic, minced
  • 14.5 ounces beef broth
  • 15 ounces canned black beans, rinsed and drained
  • 2 pounds ground turkey
  • 1 cup canned whole-kernel corn, drained
  • 0.5 cup picante sauce
  • 0.25 cup tortilla chips, crushed
  • 1 teaspoon taco seasoning
  • 1.5 cups Mexican cheese blend, shredded

Instructions

  • Step 1: Preheat your oven to 350°F (175°C). Prepare 1 cup of long grain rice according to package instructions.
  • Step 2: In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.
  • Step 3: In a large mixing bowl, combine cooked rice, sautéed onion and garlic, black beans, ground turkey, corn, picante sauce, crushed tortilla chips, and taco seasoning. Mix well.
  • Step 4: Transfer the mixture into a loaf pan, shaping it into a smooth loaf.
  • Step 5: Sprinkle shredded Mexican cheese blend evenly over the top of the meatloaf.
  • Step 6: Bake for about 1 hour, or until the center reaches 165°F (75°C).
  • Step 7: Let the meatloaf rest for about 10 minutes before slicing.
