Ingredients

Poaching Liquid

  • 1 cup dry Apple cider
  • 1 cup water

Aromatics

  • 1 medium shallot, peeled and thinly sliced
  • 1 clove garlic, thinly sliced large
  • 1 handful fresh dill
  • 1 handful fresh parsley
  • 6 whole peppercorns
  • 1 whole lemon, cut in half

Salmon

  • 1 pound wild-caught skin-on salmon fillet
  • ½ teaspoon salt

Instructions

  • Step 1: In a medium bowl, mix together the dry Apple cider and water to create the poaching liquid.
  • Step 2: Add the sliced shallot, sliced garlic, fresh dill, fresh parsley, whole peppercorns, and the halved lemon to the slow cooker. Squeeze the juice of the lemon halves into the liquid.
  • Step 3: Sprinkle the salt evenly over the salmon fillet to enhance the flavors.
  • Step 4: Place the seasoned salmon fillet on top of the aromatics in the slow cooker, skin-side down.
  • Step 5: Pour the vinegar and water mixture over the salmon and aromatics, ensuring the salmon is mostly submerged.
  • Step 6: Cover the slow cooker and cook on low for about 2 to 2.5 hours, or until the salmon is opaque and flakes easily with a fork.
  • Step 7: Carefully remove the salmon from the slow cooker and serve warm, garnished with fresh herbs and lemon slices.
