Instructions
Step 1: Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
Step 2: In a medium mixing bowl, combine the whole wheat flour, all-purpose flour, light brown sugar, cornstarch, lemon zest, baking powder, and salt. Whisk until well combined.
Step 3: Cut the cold butter into the dry mixture until it resembles coarse crumbs.
Step 4: Stir in the Vanilla Greek yogurt until the mixture forms a thick, sticky dough.
Step 5: Transfer the dough into the prepared baking dish and press it evenly into the bottom.
Step 6: Bake the crust for about 15-20 minutes, or until lightly golden.
Step 7: While the crust is baking, prepare the filling by whisking together more Greek yogurt, honey, and lemon juice.
Step 8: Once the crust is done, pour the filling over it and spread evenly.
Step 9: Bake again for 20-25 minutes until the filling is set and slightly jiggly in the center.
Step 10: Allow to cool for at least 30 minutes before lifting out and slicing into squares.
