Ingredients

  • 4 tablespoons olive oil
  • 4 tablespoons fresh rosemary, minced stems removed
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Kabob Ingredients

  • 2 pounds sirloin steak, trimmed cut into 1-inch cubes
  • 2 pieces bell peppers, cored and cut into 1-inch pieces
  • 1 piece red onion, peeled and cut into 1-inch pieces
  • 2 pieces zucchini, cut into 1/4 to 1/2-inch slices

Instructions

  • Step 1: In a medium bowl, whisk together the olive oil, minced rosemary, balsamic vinegar, lemon juice, Dijon mustard, minced garlic, salt, and black pepper.
  • Step 2: Cut the sirloin steak into 1-inch cubes. Place the steak cubes in a large resealable plastic bag or a shallow dish. Pour the marinade over the steak and refrigerate for at least 30 minutes, ideally for 2 hours.
  • Step 3: Prepare your vegetables by cutting the bell peppers, red onion, and zucchini into the specified sizes.
  • Step 4: Assemble the kabobs by threading the steak cubes and vegetables onto the skewers, alternating between them.
  • Step 5: Preheat your grill to medium-high heat.
  • Step 6: Grill the kabobs for about 10-12 minutes, turning occasionally, until the steak reaches your desired doneness.
  • Step 7: Remove the kabobs from the grill and let them rest for a few minutes before serving.
