Ingredients

Vegetables

  • cup Red Onion Peeled and thinly sliced
  • ½ cup Shallot Peeled and thinly sliced

Tomatoes

  • 2 pints Cherry Tomatoes Or grape tomatoes

Seasoning

  • ¼ teaspoon Salt
  • teaspoon Black Pepper

Herbs and Cheese

  • ½ cup Fresh Basil Leaves Chopped
  • ½ cup Feta Cheese Crumpled

Oil

  • 4 tablespoons Olive Oil Divided

Instructions

  • Step 1: Gather your ingredients. Rinse the cherry tomatoes and set aside to dry. Peel and thinly slice the red onion and shallots.
  • Step 2: In a large skillet, heat 2 tablespoons of olive oil over medium heat until hot.
  • Step 3: Add the sliced red onion and shallot to the skillet. Sauté for about 3-4 minutes until they soften and become translucent.
  • Step 4: Add the cherry tomatoes to the skillet and shake gently to distribute them evenly.
  • Step 5: Sprinkle salt and black pepper over the tomatoes and cook for about 8-10 minutes, stirring occasionally, until they start to burst and blister.
  • Step 6: Remove from heat, drizzle the remaining olive oil over the tomatoes, and stir in the chopped basil. Sprinkle crumbled feta cheese on top.
  • Step 7: Transfer to a serving dish and enjoy warm or at room temperature.
