Ingredients

Vegetables

  • 2 pounds Broccoli, cut into small pieces

Canned Goods

  • 10.5 ounces Cream of mushroom soup (1 can)

Dairy

  • 1 cup Milk
  • 2.5 cups Shredded cheddar cheese, divided

Crackers

  • 17 pieces Ritz butter crackers, crushed (about ½ sleeve)

Instructions

  • Step 1: Preheat your oven to 350°F (175°C). Wash the broccoli thoroughly and cut it into small, bite-sized pieces. Optionally, blanch the broccoli in boiling water for 3 to 5 minutes for a softer texture. Drain and set aside.
  • Step 2: In a large mixing bowl, combine the cream of mushroom soup and milk. Whisk until smooth. Add in 2 cups of shredded cheddar cheese and stir until well incorporated.
  • Step 3: Fold in the broccoli pieces gently, ensuring all broccoli is coated with the creamy mixture.
  • Step 4: Transfer the broccoli mixture into a greased 9×13 inch baking dish and spread it out evenly. Sprinkle the remaining ½ cup of cheddar cheese on top.
  • Step 5: Distribute the crushed Ritz crackers evenly over the cheese layer for added crunch.
  • Step 6: Bake in the preheated oven for about 25 to 30 minutes or until the top is golden brown and bubbly.
  • Step 7: Let the casserole cool for a few minutes before serving. Enjoy!
