Instructions
Step 1: Heat olive oil in a large skillet over medium heat. Add diced onion and a pinch of salt, sauté for 3-5 minutes until translucent. Add jalapeno and garlic, sauté for another 2-3 minutes until fragrant.
Step 2: Add black beans and stock to the skillet, stir to combine.
Step 3: Sprinkle in onion powder, salt, and pepper. Stir until evenly coated.
Step 4: Increase heat to medium-high and bring to a gentle simmer. Cook for about 10 minutes, stirring occasionally.
Step 5: Reduce heat to medium-low and mash the beans to desired consistency using a potato masher.
Step 6: If too thick, add more stock or water to adjust consistency. Cook for an additional 5 minutes, stirring frequently.
Step 7: Taste and adjust seasoning as needed before serving.
