  • 2 tablespoons Olive Oil
  • 1 medium Yellow Onion, peeled and diced
  • 1 medium Jalapeno, seeded and diced
  • 2 cloves Garlic, minced
  • 30 ounces Canned Black Beans, drained and rinsed (2 cans)
  • 4 cups Chicken Stock or Vegetable Stock
  • 1 teaspoon Onion Powder
  • 1 teaspoon Salt
  • ½ teaspoon Pepper

Instructions

  • Step 1: Heat olive oil in a large skillet over medium heat. Add diced onion and a pinch of salt, sauté for 3-5 minutes until translucent. Add jalapeno and garlic, sauté for another 2-3 minutes until fragrant.
  • Step 2: Add black beans and stock to the skillet, stir to combine.
  • Step 3: Sprinkle in onion powder, salt, and pepper. Stir until evenly coated.
  • Step 4: Increase heat to medium-high and bring to a gentle simmer. Cook for about 10 minutes, stirring occasionally.
  • Step 5: Reduce heat to medium-low and mash the beans to desired consistency using a potato masher.
  • Step 6: If too thick, add more stock or water to adjust consistency. Cook for an additional 5 minutes, stirring frequently.
  • Step 7: Taste and adjust seasoning as needed before serving.

Notes

For a smokier flavor, add smoked paprika. For creaminess, stir in sour cream or yogurt before serving. To make vegan, use vegetable stock.
