Ingredients

  • 3 pounds red potatoes washed and quartered
  • 1 yellow onion sliced
  • 1 red bell pepper diced

Seasonings

  • 3 tablespoons olive oil
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Instructions

  • Step 1: Preheat your oven to 425°F (220°C).
  • Step 2: Cut the washed red potatoes into quarters, slice the yellow onion, and dice the red bell pepper.
  • Step 3: In a large mixing bowl, combine the quartered potatoes, sliced onions, and diced bell peppers. Drizzle with olive oil and sprinkle with onion powder, garlic powder, salt, and black pepper. Toss until well coated.
  • Step 4: Line a baking sheet with parchment paper and spread the seasoned potato mixture in a single layer.
  • Step 5: Roast in the oven for about 30-35 minutes, stirring halfway through, until golden brown and crispy.
