Ingredients

Ingredients

  • 3.4 ounces Coconut cream instant pudding mix
  • 20 ounces Pineapple tidbits with juice
  • 3 cups Cool Whip (thawed if store-bought)
  • 20 ounces Maraschino cherries, drained and sliced in half
  • 0.25 cup Salted caramel sauce plus more to taste

Instructions

  • Step 1: In a large mixing bowl, pour in the coconut cream instant pudding mix. Add in the entire can of pineapple tidbits along with the juice. Whisk these together until the pudding mix is fully dissolved and the mixture is well combined.
  • Step 2: Once the pudding mixture is smooth, gently fold in the thawed Cool Whip. Use a spatula to incorporate it carefully; you want to maintain the light and fluffy texture of the whipped cream.
  • Step 3: Next, fold in the halved maraschino cherries. Be sure to mix gently so that the cherries are evenly distributed without breaking them apart.
  • Step 4: Now for the fun part—add the salted caramel sauce! Drizzle it into the mixture and give it a gentle stir, creating beautiful ribbons of caramel throughout your fluff.
  • Step 5: Transfer the fluff into a serving dish or individual cups. Cover with plastic wrap and let it chill in the refrigerator for at least 2 hours.
  • Step 6: When you’re ready to serve, give the fluff a gentle stir, then top with additional caramel sauce and extra cherries if desired. Enjoy your creation with family and friends!

Notes

For a richer coconut flavor, use coconut-flavored whipped topping or make your own from scratch. Make this fluff a day ahead of time; it tastes even better after sitting overnight in the fridge.
