20ouncesGround BeefEnough for 4 patties
4slicesCheeseSwiss, cheddar, or American
8slicesBreadRye or sourdough

Instructions
Step 1: Melt the unsalted butter in a large skillet over medium heat. Add the thinly sliced yellow onion, sprinkle with salt and black pepper, and cook slowly until soft and golden brown, about 15-20 minutes.
Step 2: Shape the ground beef into 4 equal-sized patties, seasoning each side with salt and black pepper. Optionally mix in garlic powder or Worcestershire sauce.
Step 3: Cook the patties in a separate skillet or on a grill over medium-high heat for 3-4 minutes on each side. Add a slice of cheese on each patty during the last minute and cover to melt.
Step 4: Assemble the melts by buttering one side of two slices of bread. Place one slice butter-side down in a pan, add the cheesy patty, caramelized onions, and top with the second slice butter-side up.
Step 5: Grill the sandwich until golden brown and crispy, about 2-3 minutes per side. Press down lightly with a spatula for even grilling.
Step 6: Remove from the pan, let rest for a minute, then slice in half and serve hot with your favorite sides.

Notes
Use good quality ground beef (80/20) for juicy burgers. Don't rush the caramelization of the onions. Experiment with different cheeses for varied flavors.
