Parmesan Garlic Noodles

Quick, garlicky Parmesan noodles ready in minutes for an easy weeknight meal.

Ingredients

  • 8 oz spaghetti or linguine 230 g
  • 1/2 stick butter
  • 2 tablespoons olive oil
  • 5 cloves garlic finely minced
  • 1/4 cup Parmesan cheese grated
  • salt to taste
  • 1 tablespoon grated cheddar cheese for garnishing
  • parsley chopped, for garnishing

Instructions

  • Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente; drain and set aside.
  • Heat a large skillet over medium heat and add the butter and olive oil until the butter melts.
  • Add the minced garlic and sauté until fragrant and just beginning to brown, about 1–2 minutes.
  • Toss the drained pasta into the skillet and stir to coat evenly with the garlic butter mixture; season with salt to taste.
  • Remove the pan from the heat and stir in the grated Parmesan until melted and combined.
  • Serve immediately, garnished with grated cheddar and chopped parsley.

Notes

  • For an Asian twist, substitute 1/2 tablespoon oyster sauce for salt.
