Instructions
Step 1: Pat the scallops dry with a paper towel and season both sides with salt and pepper.
Step 2: Heat olive oil and unsalted butter in a large skillet over medium-high heat.
Step 3: Sear the scallops in the hot pan for 2-3 minutes without moving them.
Step 4: Flip the scallops and cook for an additional 1-2 minutes until opaque.
Step 5: Remove scallops and cover with foil. In the same skillet, add basil pesto and heavy cream, stirring to combine.
Step 6: Return scallops to the pan to coat them in the creamy pesto sauce and serve immediately.
