Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1.25 teaspoons salt
  • 0.5 teaspoon baking soda
  • 1.75 cups rolled oats

Wet Ingredients

  • 1 cup unsalted butter at room temperature
  • 1 cup creamy peanut butter
  • 2 cups light brown sugar not packed
  • 2 large eggs at room temperature
  • 0.5 tablespoon vanilla extract

Mix-ins

  • 1 cup mini semi-sweet chocolate chips
  • 2 cups mini M&Ms divided

Instructions

  • Step 1: Preheat your oven to 350°F (175°C).
  • Step 2: Grease a 9×13 inch baking dish with cooking spray or line it with parchment paper.
  • Step 3: In a large mixing bowl, whisk together the all-purpose flour, salt, and baking soda.
  • Step 4: Add the rolled oats to the dry ingredients and mix until fully combined.
  • Step 5: In a separate bowl, combine the unsalted butter and creamy peanut butter. Beat until smooth, then gradually add in the light brown sugar.
  • Step 6: Beat in the eggs one at a time, then mix in the vanilla extract.
  • Step 7: Gradually mix the dry ingredients into the wet mixture until just combined.
  • Step 8: Gently fold in the mini semi-sweet chocolate chips and 1 cup of mini M&Ms.
  • Step 9: Pour the cookie dough into the prepared baking dish and sprinkle the remaining 1 cup of mini M&Ms on top.
  • Step 10: Bake for 20-25 minutes until golden brown around the edges and firm in the center. Let cool before cutting.
