Ingredients

Lobster

  • 4 tails lobster tails, thawed if frozen

Seasoning

  • ½ tablespoon salt
  • 2 tablespoons olive oil

Aromatics

  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced

Liquids

  • ½ cup dry Apple cider (or a splash of lemon juice)
  • 4 cups seafood stock or water
  • 1 cup heavy cream
  • 1 tablespoon tomato paste
  • 1 teaspoon smoked paprika

Garnish

  • fresh parsley, chopped for garnish
  • freshly cracked black pepper to taste

Instructions

  • Step 1: Prepare the lobster tails by cutting through the shell and chopping the meat into bite-sized pieces. Reserve the shells.
  • Step 2: In a large pot, heat olive oil over medium heat. Sauté the onion for 5 minutes, then add garlic, carrots, and celery, cooking for another 5-7 minutes.
  • Step 3: Add the reserved lobster shells to the pot and stir for 1-2 minutes. Pour in the Apple cider or lemon juice and simmer until reduced by half.
  • Step 4: Add seafood stock or water, tomato paste, salt, and smoked paprika. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Step 5: Strain the soup through a fine-mesh sieve, discarding solids. Return the liquid to the pot.
  • Step 6: Stir in heavy cream and heat gently. Add chopped lobster meat and warm for 5 minutes.
  • Step 7: Adjust seasoning with salt and black pepper. Optionally add more smoked paprika or lemon juice.

Notes

For added depth, roast lobster shells before use. Store leftovers in an airtight container for up to 3 days or freeze for 3 months.
