Filling

  • 0.33 cup raspberry jam for filling
  • Powdered sugar for dusting

Instructions

  • Step 1: Prepare the Dough - Combine the all-purpose flour, almond flour, and salt in a mixing bowl. In a separate bowl, cream the softened butter and sugar until light and fluffy.
  • Step 2: Add Wet Ingredients - Add the egg and vanilla to the butter mixture and beat until combined. Gradually mix in the dry ingredients until the dough forms.
  • Step 3: Chill the Dough - Divide the dough into two portions, flatten into disks, wrap in plastic, and chill for at least one hour.
  • Step 4: Roll and Cut the Cookies - Preheat oven to 350°F (175°C). Roll out one disk to ¼-inch thickness, cut cookies, and cut out centers for half.
  • Step 5: Bake the Cookies - Place cookies on a parchment-lined baking sheet and bake for 10-12 minutes until edges are golden.
  • Step 6: Fill with Jam - Spread raspberry jam on solid cookies, top with cut-out cookies, and dust with powdered sugar.
