Ingredients

  • 1 pound lean ground beef

Vegetables

  • ¼ cup yellow onion, peeled and chopped
  • 3 cloves garlic, minced
  • 2 teaspoons fresh ginger, peeled and grated
  • 1 large zucchini, sliced
  • 1 red bell pepper, seeded and chopped
  • 5 cups cooked brown rice
  • 1 teaspoon olive oil

  • green onions, sliced for garnish
  • sesame seeds for garnish

Instructions

  • In a large skillet over medium heat, add the olive oil and heat until shimmering. Toss in the chopped yellow onion and sauté for about 2-3 minutes until they become translucent and fragrant. Add the minced garlic and grated ginger, stirring frequently to avoid burning.
  • Next, add the lean ground beef to the skillet. Break it up with a wooden spoon and cook until browned and fully cooked through, about 5-7 minutes. Season with a splash of soy sauce or your preferred seasoning to enhance its flavor.
  • Once the beef is cooked, add the sliced zucchini and chopped red bell pepper to the skillet. Stir all the ingredients well, allowing the vegetables to soften slightly, which should take about 4-5 minutes.
  • Prepare your cooked brown rice if you haven’t done so already. This can often be done in a rice cooker or on the stove.
  • To serve, divide the cooked brown rice among serving bowls. Top each bowl generously with the Korean beef and vegetable mixture.
  • Finish off your bowls by sprinkling sliced green onions and sesame seeds on top for an added burst of flavor and a lovely visual appeal. Serve hot and enjoy!

Notes
