Instructions
In a large mixing bowl, combine the ground chicken, grated Parmesan cheese, Italian bread crumbs, Italian seasoning, chopped parsley, minced garlic, sliced green onions, salt, and black pepper. Mix until all ingredients are evenly incorporated.
Divide the mixture into four equal portions and shape each into a patty, about ¾-inch thick. Make a slight indentation in the center of each patty.
Heat olive oil in a skillet over medium heat. Add the patties and cook for about 5-6 minutes on one side until browned, then flip and cook for another 5-6 minutes until the internal temperature reaches 165°F (74°C).
During the last minute of cooking, place a slice of mozzarella cheese on each burger and cover the skillet briefly to melt the cheese.
Toast the hamburger buns and spread a tablespoon of pesto on the bottom half of each bun. Add a spinach or arugula leaf, the cheesy chicken burger, and drizzle with marinara sauce before topping with the other half of the bun.
