Ingredients

Chicken

  • 1.5 pounds boneless skinless chicken breasts, cut into 1 ½-inch cubes

Vegetables

  • 1 pound red potatoes, cut into 1 ½-inch cubes
  • 1 large red onion, cut into 1 ½-inch chunks
  • 2 medium zucchinis, cut into ¼-inch slices

Marinade

  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup honey
  • 0.25 cup Dijon mustard
  • 1 tablespoon apple cider vinegar

Instructions

  • Step 1: In a medium bowl, whisk together the honey, Dijon mustard, apple cider vinegar, olive oil, salt, and black pepper until well combined.
  • Step 2: Place the cubed chicken breasts in a large resealable plastic bag or a mixing bowl. Pour half of the marinade over the chicken, ensuring it is well-coated. Seal the bag or cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for more intense flavor.
  • Step 3: In a separate bowl, toss the red potatoes, zucchini, and red onion with the remaining marinade until well coated. Let them sit for about 20-30 minutes to absorb the flavors.
  • Step 4: Thread a piece of potato onto the skewer, followed by a piece of marinated chicken, a chunk of red onion, and finally a slice of zucchini. Repeat the process until all ingredients are used.
  • Step 5: Preheat your grill to medium-high heat. Place the assembled kabobs on the grill, cooking for about 15-20 minutes, turning occasionally until the chicken reaches an internal temperature of 165°F (75°C) and the vegetables are tender.
  • Step 6: Once done, remove the kabobs from the grill and let them rest for a few minutes. Garnish with fresh herbs if desired, and serve warm.
