Instructions

  • Step 1: Prepare the Ingredients. Start by gathering all your ingredients. Chop the yellow onion and peel and chop the Gala apple, ensuring they are in small, bite-sized pieces that will mix well with the ground chicken.
  • Step 2: Sauté the Onions and Apples. In a skillet, heat the coconut oil over medium heat. Once hot, add the chopped onions and sauté for about 3-4 minutes until they become translucent. Next, add the chopped Gala apple to the skillet and continue to sauté for another 3-4 minutes until the apple has softened slightly.
  • Step 3: Mix the Chicken and Seasonings. In a large mixing bowl, combine the ground chicken with the sautéed onion and apple mixture. Then, add the ground sage, chopped fennel seeds, salt, pepper, smoked paprika, and cayenne pepper. Use your hands or a spoon to mix everything gently but thoroughly.
  • Step 4: Form the Sausage Patties. Once everything is combined, shape the mixture into sausage patties, about ½ inch thick. Repeat until all the mixture is used up.
  • Step 5: Cook the Sausage Patties. In the same skillet, add a bit more coconut oil if needed. Heat over medium heat. Carefully place the sausage patties in the skillet, leaving space between each one. Cook for about 4-5 minutes on each side until they are golden brown and cooked through, reaching an internal temperature of 165°F.
  • Step 6: Serve and Enjoy. Once they’re cooked, remove the patties from the skillet and let them rest for a minute. Serve them warm with your favorite breakfast sides.
