Instructions
Step 1: Preheat your oven to 350°F (175°C) and line a standard cupcake pan with cupcake liners.
Step 2: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
Step 3: In another bowl, combine the whole milk, vegetable oil, eggs, and vanilla extract. Whisk until fully integrated.
Step 4: Pour the wet mixture into the dry ingredients and stir until just combined.
Step 5: Gently fold in the rainbow jimmies sprinkles.
Step 6: Fill each cupcake liner about two-thirds full with the batter.
Step 7: Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Step 8: Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
