  • 2 pints Cherry Tomatoes (about 24 tomatoes)
  • cup Extra Virgin Olive Oil
  • 1 block Feta Cheese (16-18 ounces, drained)
  • 16 ounces Fusili Pasta
  • 3 cloves Garlic (minced)
  • Salt to taste
  • Pepper to taste
  • Fresh Basil (chopped)

Instructions

  • Step 1: Prepare the Ingredients - Rinse the cherry tomatoes and slice them in half. Chop the fresh basil.
  • Step 2: Set Up the Baking Dish - Preheat the oven to 400°F (200°C). In a large baking dish, combine halved cherry tomatoes, olive oil, minced garlic, salt, and pepper.
  • Step 3: Add the Feta - Nestle the block of feta cheese in the center of the baking dish.
  • Step 4: Roast the Dish - Roast in the oven for 25-30 minutes until tomatoes burst and feta is golden.
  • Step 5: Cook the Pasta - Boil salted water and cook fusili pasta until al dente. Drain, reserving some pasta water.
  • Step 6: Combine Everything - Mash the roasted feta and tomatoes together, then add the cooked pasta and mix well.
  • Step 7: Finish with Fresh Basil - Fold in chopped basil and adjust seasoning with salt and pepper.
  • Step 8: Serve and Enjoy! - Serve warm, drizzled with extra olive oil if desired.

Notes
