Easy Microwave Quiche

Instructions
Grease a microwave-safe mug or ramekin with the butter.
Crack the egg into the mug and add the milk; whisk until smooth.
Stir in the chopped tomatoes, fresh spinach, and grated cheese. Season with salt and pepper.
Cover the mug with a plate or paper towel and microwave on high for 1 minute, or until the egg has puffed and set.
Let rest for 30 seconds, then top with any desired fresh ingredients and enjoy.

Notes
