  • 2 cups Heavy Cream
  • 5 large Egg Yolks
  • 0.5 cup Granulated Sugar
  • 1 tablespoon Vanilla Extract
  • to taste Granulated Sugar for Topping
  • as needed Fresh Raspberries for Garnish
  • as needed Fresh Mint for Garnish

Instructions

  • Step 1: Preheat your oven to 325°F (160°C) and place ramekins in a baking dish.
  • Step 2: Heat the heavy cream and vanilla extract in a saucepan until hot but not boiling.
  • Step 3: Whisk together egg yolks and granulated sugar until pale and smooth.
  • Step 4: Slowly add the hot cream mixture to the egg yolk mixture while whisking constantly.
  • Step 5: Pour the custard mixture into the prepared ramekins.
  • Step 6: Create a water bath by placing the baking dish in the oven and adding hot water halfway up the sides of the ramekins.
  • Step 7: Bake for 35-40 minutes until set but still slightly jiggly in the center.
  • Step 8: Cool the ramekins at room temperature, then refrigerate for at least 2 hours.
  • Step 9: Sprinkle granulated sugar on top and caramelize using a kitchen torch or broiler.
  • Step 10: Garnish with fresh raspberries and mint leaves before serving.

Notes
