Instructions
Step 1: Preheat your oven to 325°F (160°C) and place ramekins in a baking dish.
Step 2: Heat the heavy cream and vanilla extract in a saucepan until hot but not boiling.
Step 3: Whisk together egg yolks and granulated sugar until pale and smooth.
Step 4: Slowly add the hot cream mixture to the egg yolk mixture while whisking constantly.
Step 5: Pour the custard mixture into the prepared ramekins.
Step 6: Create a water bath by placing the baking dish in the oven and adding hot water halfway up the sides of the ramekins.
Step 7: Bake for 35-40 minutes until set but still slightly jiggly in the center.
Step 8: Cool the ramekins at room temperature, then refrigerate for at least 2 hours.
Step 9: Sprinkle granulated sugar on top and caramelize using a kitchen torch or broiler.
Step 10: Garnish with fresh raspberries and mint leaves before serving.
