Ingredients

Cucumbers

  • 4 large Cucumbers, halved and cut into thick slices

Onion

  • ¼ cup Red onion, finely sliced (optional) Optional for added sweetness and color.

Dill

  • ¼ cup Fresh dill, roughly chopped

Yogurt

  • 1 cup Plain yogurt (Greek or regular)

Olive Oil

  • 2 tablespoons Olive oil

Lemon Juice

  • 1 tablespoon Lemon juice

Salt and Pepper

  • Salt and pepper to taste

Instructions

  • Step 1: Wash the cucumbers thoroughly. Cut each cucumber in half lengthwise and then slice each half into thick half-moons.
  • Step 2: If using red onion, finely slice it into thin rounds or half-moons.
  • Step 3: Rinse the fresh dill under cold water, then chop it roughly.
  • Step 4: In a large mixing bowl, combine the yogurt, olive oil, lemon juice, and a pinch of salt and pepper. Whisk until smooth.
  • Step 5: Add the cucumbers, onion, and dill to the bowl with the dressing. Toss gently to coat.
  • Step 6: Chill in the refrigerator for about 30 minutes before serving.

Notes
