  • 1 tablespoon olive oil
  • 2 pounds boneless beef loin, cut into 1/2 to 1-inch cubes
  • 1 large yellow onion, peeled and diced
  • 2 cloves garlic, minced
  • 1 jalapeno, seeded and diced
  • 1 poblano pepper, seeded and chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 cups chicken stock
  • 29 ounces canned white hominy, drained
  • 16 ounces salsa verde
  • 7 ounces canned diced green chiles

Instructions

  • Step 1: In a skillet over medium heat, warm the olive oil. Add the diced onion and minced garlic. Sauté for about 3-4 minutes until the onion is translucent and fragrant.
  • Step 2: In the same skillet, add the beef loin cubes to the onions and garlic. Brown the beef on all sides for about 5-7 minutes.
  • Step 3: Transfer the browned beef, onion, and garlic mixture to your crock pot. Add in the jalapeno, poblano pepper, ground cumin, salt, and pepper. Stir to combine.
  • Step 4: Pour in the chicken stock, followed by the drained hominy, salsa verde, and diced green chiles.
  • Step 5: Cover your crock pot and cook on low for 6-8 hours or on high for 4-5 hours.
  • Step 6: Once cooked, taste and adjust the seasonings if necessary. Serve the pozole in bowls with your favorite toppings.

Notes

For extra depth of flavor, consider adding a bay leaf or a dash of smoked paprika during cooking. Garnish with fresh cilantro, radishes, or avocado.
