Ingredients

Beef

  • 2.5 pounds stew meat, cut into 1 ½-inch pieces

Flour

  • 5 tablespoons all-purpose flour, divided

Seasoning

  • 1 teaspoon salt

Vegetables

  • 1 large yellow onion, peeled and diced
  • 4 cloves garlic, minced

Condiments

  • 1.5 tablespoons Dijon mustard (not grainy)
  • 1 tablespoon Worcestershire sauce

Broth

  • 2 cups low-sodium beef broth

Mushrooms

  • 16 ounces crimini mushrooms, sliced (or any button mushroom)

Thickening Agents

  • 1.5 tablespoons cornstarch
  • 3 tablespoons cold water

Cream

  • 0.75 cup sour cream
  • 0.5 cup heavy cream

Garnish

  • Fresh parsley, chopped for garnish

  • Cooked egg noodles for serving

Instructions

  • Step 1: Prepare the Beef - Place the stew meat in a large bowl. Sprinkle 3 tablespoons of the all-purpose flour and the salt over the meat, tossing until well-coated.
  • Step 2: Sauté the Aromatics - In a skillet over medium heat, add a drizzle of oil. Add the diced onions and sauté for about 5 minutes until translucent. Add minced garlic and cook for an additional minute until fragrant.
  • Step 3: Assemble in the Crock Pot - In your crock pot, combine the coated stew meat, sautéed onions and garlic, Dijon mustard, Worcestershire sauce, beef broth, and sliced mushrooms. Stir to ensure all ingredients are well distributed.
  • Step 4: Slow Cook - Cover the crock pot with the lid and set it to low heat for about 7-8 hours or high heat for 4-5 hours.
  • Step 5: Thicken the Sauce - Once cooking time is complete, mix cornstarch and cold water in a small bowl. Stir this mixture into the crock pot and cook on high for an additional 20-30 minutes until the sauce thickens.
  • Step 6: Add the Cream - Stir in the sour cream and heavy cream, mixing until well combined. Adjust seasoning with salt and pepper if needed.
  • Step 7: Serve! - Place a generous portion of cooked egg noodles on each plate, then ladle the beef stroganoff over the noodles. Sprinkle with freshly chopped parsley.
