Ingredients

Cheese Mixture

  • 1.5 cups mozzarella cheese, shredded
  • 1 cup white cheddar cheese, shredded see note
  • 2 jalapeƱos, seeded and minced
  • 1 clove garlic, minced

Breading Station

  • 0.5 cup all-purpose flour
  • 2 large eggs
  • 0.25 cup milk
  • 2 cups panko bread crumbs
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon salt
  • Vegetable oil or other neutral oil, for frying
  • Ranch dressing for serving

Instructions

  • Step 1: Prepare the Cheese Mixture - Combine the mozzarella and white cheddar cheese in a mixing bowl. Add the minced jalapeƱos and garlic, stirring until thoroughly combined. Set aside.
  • Step 2: Set Up Your Breading Station - In one shallow bowl, add the all-purpose flour. In another bowl, whisk together the eggs and milk. In a third bowl, mix the panko bread crumbs, smoked paprika, and salt.
  • Step 3: Form the Bites - Take a heaping tablespoon of the cheese mixture and roll it into a ball or patty shape. Repeat until all the mixture is used.
  • Step 4: Bread the Rattlesnake Bites - Coat each cheese ball in flour, dip in the egg mixture, and roll in the panko mixture.
  • Step 5: Fry the Bites - Heat vegetable oil in a large skillet. Fry the bites for 2-3 minutes on each side until golden brown. Transfer to a paper towel-lined plate.
