Instructions
Step 1: Preheat your oven to 375°F (190°C).
Step 2: Line a standard 12-cup muffin tin with paper liners or grease it lightly.
Step 3: In a large mixing bowl, whisk together the flour, baking powder, salt, and cinnamon.
Step 4: In another bowl, beat the eggs, then add oil, sugar, buttermilk, and vanilla. Whisk until smooth.
Step 5: Gradually pour the wet ingredients into the dry ingredients and fold gently until just combined.
Step 6: Spoon the batter into the muffin cups, filling each about two-thirds full.
Step 7: Bake for 18 to 20 minutes, or until golden brown and a toothpick comes out clean.
Step 8: Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
