Wet Ingredients

  • 0.5 cup butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup sour cream or Greek yogurt
  • 0.5 cup milk
  • 1 tablespoon molasses can substitute with honey or agave syrup
  • 2 teaspoons ground cinnamon

Instructions

  • Step 1: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  • Step 2: In a medium bowl, whisk together the flour, baking powder, salt, and ground cinnamon. Set aside.
  • Step 3: In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  • Step 4: Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • Step 5: Mix in the sour cream (or Greek yogurt) and milk until smooth.
  • Step 6: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Step 7: Fold in the molasses until evenly distributed.
  • Step 8: Pour the batter into the prepared loaf pan and smooth the top.
  • Step 9: Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  • Step 10: Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
