Instructions
Step 1: Gather all your ingredients. Shred the zucchini and set it aside. Mince the garlic, and measure out your rice, chicken stock, and cheese.
Step 2: In a large pot, heat the olive oil and butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Step 3: Add the rice to the pot, stirring to coat with the oil and butter. Toast the rice for 2-3 minutes.
Step 4: Pour in the chicken stock and add salt. Stir and bring to a gentle boil. Cover and simmer for 15-18 minutes until rice is cooked.
Step 5: Remove from heat and fluff the rice. Fold in the zucchini and cheddar cheese until combined.
Step 6: Serve warm as a side or main dish, adjusting seasoning as needed.

Notes
