  • 0.5 teaspoon toasted sesame oil
  • 1 teaspoon sesame seeds

Instructions

  • Step 1: Prepare the Ingredients. Start by prepping all your ingredients. Dice the carrots and onion, mince the garlic, and slice the green onions. Having everything ready will make the cooking process smoother and more enjoyable.
  • Step 2: Cook the Eggs. In a large skillet or wok, melt 2 tablespoons of the butter over medium heat. Once melted, pour in the beaten eggs and scramble them gently until fully cooked. Remove the eggs from the skillet and set them aside on a plate.
  • Step 3: Sauté the Vegetables. In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the diced onion and carrots. Sauté for about 3-5 minutes until the vegetables are tender and the onion is translucent. Stir in the minced garlic and cook for another minute until fragrant.
  • Step 4: Add the Cauliflower Rice and Peas. Toss in the cauliflower rice and frozen peas into the skillet. Stir well to combine with the sautéed vegetables. Cook for about 5-7 minutes, allowing the cauliflower to soften and absorb the flavors.
  • Step 5: Season and Finish Up. Pour the soy sauce and toasted sesame oil over the cauliflower mixture. Toss everything together to ensure even distribution of flavors. Add the scrambled eggs back into the skillet along with the sliced green onions. Stir to combine everything thoroughly. Remove from heat.
  • Step 6: Serve and Garnish. Plate the cauliflower fried rice hot, garnish with extra green onions and a sprinkle of sesame seeds for added crunch and flavor. Enjoy this delightful dish on its own or pair it with your favorite protein for a complete meal.
