Ingredients

Tortilla Chips

  • 11 ounces tortilla chips (1 bag)

Chicken

  • 2 cups cooked chicken, shredded

Black Beans

  • 14.5 ounces canned black beans drained and rinsed

Spices

  • 1 teaspoon ground cumin
  • 0.5 teaspoon chipotle powder
  • 0.25 teaspoon black pepper

Cheese

  • 2 cups cheddar cheese, shredded

Toppings

  • 1 cup pico de gallo
  • 2 avocados, chopped
  • 0.5 cup sour cream
  • 2 jalapenos, sliced
  • 2.25 ounces canned sliced black olives drained
  • 1 cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  • Step 1: Preheat your oven to 400°F (200°C).
  • Step 2: In a medium bowl, combine the shredded chicken with ground cumin, chipotle powder, and black pepper. Mix well.
  • Step 3: On a large baking sheet, spread half of the tortilla chips. Top with half of the seasoned chicken, black beans, and cheddar cheese. Repeat layering.
  • Step 4: Bake for 10-12 minutes until the cheese is melted and bubbly.
  • Step 5: Remove from oven and add pico de gallo, avocados, jalapenos, and black olives.
  • Step 6: Drizzle with sour cream and sprinkle with cilantro. Serve with lime wedges.
