3cupsgreen cabbage, shredded

1clovegarlic, minced

1teaspoonsriracha

20piecesegg roll wrappers(2 per egg roll)
Avocado oil spray (or vegetable oil)
Instructions
Step 1: In a large skillet over medium heat, add the sesame oil. Once hot, add the ground beef and cook until it’s browned, breaking it apart with a spatula as it cooks. This should take about 5-7 minutes.
Step 2: To the skillet with the beef, stir in the shredded cabbage, shredded carrots, sliced green onions, chopped mushrooms, minced garlic, and minced ginger. Sauté the mixture for about 4-5 minutes, or until the vegetables are tender.
Step 3: Add the soy sauce, sriracha, and a sprinkle of salt and pepper to the skillet. Stir well to combine and let everything cook together for another minute. Taste and adjust seasoning if necessary. Remove the skillet from the heat and let the filling cool for a few minutes.
Step 4: Prepare your egg roll wrappers on a clean surface. Take one wrapper and place about 2 tablespoons of the filling near the corner of the wrapper. Fold the corner over the filling, then fold in the sides and roll tightly. Repeat this process with the remaining wrappers and filling.
Step 5: Preheat your air fryer to 375°F (190°C). Lightly spray the basket with avocado oil or vegetable oil. Arrange the egg rolls in a single layer in the basket, making sure they are not touching. Lightly spray the tops of the egg rolls with oil. Air fry for 10-12 minutes, flipping halfway through, until they are golden brown and crispy.
Step 6: Once your egg rolls are done cooking, remove them from the air fryer and let them cool slightly. Serve them warm with dipping sauce, such as soy sauce or sweet and sour sauce, and enjoy every crunchy bite!

Don’t overfill the egg rolls. Experiment with different proteins! If you find the wrappers are too dry, you can lightly mist them with water before filling to make them more pliable.
