Air Fryer Cheeseburger Egg Rolls

Crispy air-fried egg rolls filled with seasoned ground beef, cheddar, pickles, and green onion for a cheeseburger twist.

Ingredients

  • 1 pound 80% lean ground beef
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground paprika
  • 1/2 teaspoon kosher salt
  • 1 large egg
  • 1 teaspoon water
  • 1 cup freshly shredded cheddar cheese
  • 1 green onion, thinly sliced
  • 1/4 cup chopped dill pickles
  • 10 egg roll wrappers
  • sesame seeds and sea salt (optional, for garnish)

Instructions

  • Heat a medium skillet over medium-high heat and add the ground beef. Cook, breaking up with a spoon and stirring often, until browned, about 5 minutes; drain excess grease.
  • Stir the garlic powder, paprika, and kosher salt into the hot beef. Remove from heat and let the mixture cool for about 10 minutes until it is cool enough to handle.
  • In a small bowl, whisk together the large egg and 1 teaspoon water to make an egg wash; set aside.
  • In a large bowl, combine the cooled beef, shredded cheddar, sliced green onion, and chopped pickles until evenly mixed.
  • Lay one egg roll wrapper on a clean surface with a corner pointing toward you. Spoon about 1/4 cup of the filling into the center of the wrapper.
  • Brush the edges of the wrapper with egg wash. Fold the bottom corner over the filling, fold the left and right corners toward the center, then roll upward to seal. Repeat with remaining wrappers and filling.
  • Preheat the air fryer to 400°F for 5 minutes while assembling the egg rolls.
  • Lightly spray the air fryer basket with nonstick spray and place egg rolls seam-side down in a single layer without overcrowding.
  • Brush the tops of the egg rolls with egg wash and sprinkle with sesame seeds and sea salt, if desired.
  • Air fry the egg rolls at 400°F for 5 minutes, flip them, then cook an additional 5 minutes until golden and crisp. Repeat with remaining batches as needed. Serve warm with your favorite dipping sauce.

Notes

  • Let the beef mixture cool 10–15 minutes before assembling so the cheese doesn’t melt.
  • Place egg rolls seam-side down in the air fryer to help them stay sealed.
  • Flip the egg rolls halfway through cooking for even browning.
  • Do not overcrowd the air fryer basket; cook in batches if needed.
  • Brush with egg wash to promote browning.
