- 1 ½ pounds (650g) chicken breasts, skinless and boneless, sliced into thin cutlets
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1 cup chicken stock
- 1 (5.2-ounce/150g) package Boursin Cheese (garlic and fine herb flavor)
- ½ teaspoon Dijon mustard
Instructions
- Season chicken cutlets with salt and black pepper.
- Heat olive oil and butter in a skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown. Remove and set aside.
- Pour chicken stock into the skillet, scraping up any browned bits.
- Add softened Boursin cheese and Dijon mustard, stirring until smooth. Simmer for 2-3 minutes.
- Return chicken to the skillet, spoon sauce over, and let simmer for another 2-3 minutes.
- Serve immediately, garnished with fresh herbs if desired.
Notes
For extra flavor, add sautéed mushrooms or spinach to the sauce. Serve with rice, pasta, or mashed potatoes.
