Ingredients

  • 1 ½ pounds (650g) chicken breasts, skinless and boneless, sliced into thin cutlets
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 cup chicken stock
  • 1 (5.2-ounce/150g) package Boursin Cheese (garlic and fine herb flavor)
  • ½ teaspoon Dijon mustard

Instructions

  1. Season chicken cutlets with salt and black pepper.
  2. Heat olive oil and butter in a skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown. Remove and set aside.
  3. Pour chicken stock into the skillet, scraping up any browned bits.
  4. Add softened Boursin cheese and Dijon mustard, stirring until smooth. Simmer for 2-3 minutes.
  5. Return chicken to the skillet, spoon sauce over, and let simmer for another 2-3 minutes.
  6. Serve immediately, garnished with fresh herbs if desired.

Notes

For extra flavor, add sautéed mushrooms or spinach to the sauce. Serve with rice, pasta, or mashed potatoes.
