- 3 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 lb baby potatoes, halved
- 1 tablespoon olive oil
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoons honey
- 3 tablespoons soy sauce
- 4 cloves garlic, minced
- 1 tablespoon butter
- 1/2 teaspoon red pepper flakes (optional)
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C). Toss baby potatoes with olive oil, smoked paprika, salt, and black pepper. Spread on a baking sheet and roast for 20 minutes, flipping halfway.
- Heat olive oil in a skillet over medium heat. Season chicken breasts with smoked paprika, salt, and black pepper. Sear for 4-5 minutes per side until golden brown. Remove from pan.
- Reduce heat to low. Add butter, then sauté minced garlic for 30 seconds. Stir in honey, soy sauce, and red pepper flakes. Simmer for 2 minutes until thickened.
- Return chicken to pan, coating with glaze. Simmer for 5 minutes until chicken reaches 165°F (75°C), spooning glaze over it.
- Add roasted potatoes to skillet, tossing with the glaze.
- Garnish with fresh parsley and serve warm.
Notes
Store leftovers in an airtight container for up to 3 days. Reheat in a skillet with a splash of water to maintain moisture.
