Ingredients

  • 3 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 lb baby potatoes, halved
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons honey
  • 3 tablespoons soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon butter
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C). Toss baby potatoes with olive oil, smoked paprika, salt, and black pepper. Spread on a baking sheet and roast for 20 minutes, flipping halfway.
  2. Heat olive oil in a skillet over medium heat. Season chicken breasts with smoked paprika, salt, and black pepper. Sear for 4-5 minutes per side until golden brown. Remove from pan.
  3. Reduce heat to low. Add butter, then sauté minced garlic for 30 seconds. Stir in honey, soy sauce, and red pepper flakes. Simmer for 2 minutes until thickened.
  4. Return chicken to pan, coating with glaze. Simmer for 5 minutes until chicken reaches 165°F (75°C), spooning glaze over it.
  5. Add roasted potatoes to skillet, tossing with the glaze.
  6. Garnish with fresh parsley and serve warm.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in a skillet with a splash of water to maintain moisture.
